I’ve always loved mac and cheese for as long I can remember. Truthfully, I don’t know what drew me into this delicious pasta just like all the other kids.

Was it the creamy cheese oozing all over sweet little macaroni noodles? Or was it the dish’s power to look and taste appetizing regardless of the toppings? Besides, could the appeal of being a classic kitchen favorite enough to tickle my taste buds?

Whatever the reason is behind my long love for mac and cheese, we’ll never know.

True enough, not all mac and cheese are equal. There are the stellar ones like the Baked Macaroni in Mushrooms at Rocky Master. Conversely, there are the so-so ones from several fast-food chains where the salt overpowers the cheesiness it’s supposed to deliver.

My recent cravings for the table staple took me places — food blogs, Tasty, BBC Good Food, the supermarket, and most importantly my own kitchen. Add my spiking interest in cauliflower and BOOM — off to the kitchen I went to prepare a keto-friendly twist of this delicious pasta.

My first attempt in making cauliflower mac and cheese was after I stumbled upon this Low-Carb Cauliflower Mac and Cheese recipe. Thereafter, since I was working from home the next day, I took that lunchtime as an opportunity to make my newest kitchen masterpiece. I’ve even captured the cooking procedure in a series of videos still unshared from my phone. However, recent commitments delayed my plans of sharing them ASAP. Still, it deserves a future throwback Instagram Story.

The turnout was shocking.

Although it was my first time at making cauliflower mac and cheese was worthy of a “You Tried” cake from Bart Simpson, I was proud nonetheless. The taste wasnt too far off from the original Tasty recipe — tangy, creamy and yummy. Not bad for a first timer, in short.

However, that was not the end of my quest to make my perfect cauliflower mac and cheese. Another homestuck Friday called for yet another golden chance to fulfill my recipe goals.

So I tried it again, but this time with an airy twist.

Enter the air fryer, the unsung hero of kitchen appliances.

Here’s the thing: the absence of an oven should not hinder you from cooking up your next best appetizer. An airfryer can do most, if not all, things that an oven except it can add an extra crispy texture with less grease.

Going back to my story. Last Friday, I kickstarted my morning by boiling cauliflower florets and preparing the mixture for my air-fried cauliflower mac and cheese. All the while following the steps combined by this Keto Mac and Cheese Recipe and the original Low-Carb Mac and Cheese Recipe from my initial attempt.

Later at lunchtime, I slid the plate into airfryer before going to my work desk, concentrating on my spreadsheets until the timer ticked zero.

Finally, the cauliflower pasta popped out of the air fryer, and the tasting was on. I stuck my fork into the cheesy goodness of the cauliflower floret and it was love at first bite!

What Should I Pair My Pasta With?

Fried chicken or chicken tenders and cauliflower mac and cheese would make a good pairing. Similarly, lime juice or water works best for beverages.

Without further ado, I present you the full recipe of my air-fried cauliflower mac and cheese, inspired by the food blogs and websites I came across.


Air-Fried Cauliflower Mac and Cheese
Serves: One
Estimated Cooking Time: 30 to 45 minutes

Ingredients:
1 cauliflower
3 cups of shredded gouda, cheddar, and mozzarella cheese (I used Emborg’s 3 Cheese Bake Shredded for this one)
1/2 cup of parmesan cheese
1 cup of chopped bacon
3 cups of cooking cream or whole milk
1 teaspoon of garlic powder
1 1/2 teaspoon of parsley
1 teaspoon of chili powder
1 tablespoon of paprika
Salt and black pepper to taste
2 tablespoons of Tabasco Hot Sauce
2 eggs
3 tablespoons of cream cheese
Procedure:
1. Cut the cauliflower head into florets. Boil the cauliflower florets for approximately eight (8) minutes or until tender.
2. On a separate bowl, pour in three (3) cups of cooking cream or whole milk before adding three (3) tablespoons of cream cheese. Stir until the cream cheese fully melts into the mix.
3. After which, add three (3) cups of combined shredded gouda, cheddar, and mozzarella cheese into the bowl then stir gently until it melts.
4. Stir in garlic powder, parsley, paprika, salt, black pepper, and Tabasco.
5. Add the boiled cauliflower florets into the bowl and mix it well until fully coated.
6. Place the coated cauliflower florets into a baking tin pan compatible with your air fryer.
7. Sprinkle parmesan cheese and chopped bacon on top of the cauliflower and cheese mix.
8. Slide the tin into the air fryer and heat at 170°C (338°F) for 20 minutes.
9. Serve.
